DOLPHIN / MAHI MAHI

(Corphaena hippurus) Has a tremendously long dorsal fin, extending from above the eye to near the tail-fin, along with a strongly forked tail, and incredibly gorgeous blue, green, and yellow colors on the back and upper sides when alive dulling to brownish gray when dead.

World Record: 87lbs, Papagallo Gulf, Costa Rica, 1976. Known in Louisiana as the "bull dolphin", common to three feet and known to reach 6 feet in length. Fish are commonly found under floating objects. The larger the object, the more likely there will be a school of dolphin below it. Often harvested under heavy grass lines in the gulf. Bull dolphin are often difficult to coax on the hook, but as long as one member of the school is on the line, it is far easier to lure another. Bull dolphins are one of the finer food fishes. The fish is very white and mild, ideal for broiling, too good to waste in a frying pan. One of Mike Lane's favorite fish.
