Sausage Products:
- Mild Sausage - Seasoned with just the right amount
of sage that's not overwhelming.
- Spicy Sausage - This blend has a more zesty taste
and will pick up the flavor in just about anything.
- Hot Sausage - Contains natural spices that bring out
the hot flavor but not all cayenne.
- Italian Sausage - For people who like down home
Italian style without sacrificing natural flavors.
- Cajun Suasage - A mixture of New Orleans flavors.
Onions, green onions, parsley, and just enough spice to tease your pallet.
- Spicy Smoked Sausage - The same seasoning as our
fresh spicy sausage but smoked in our commercial smoker with natural hickory wood chips.
- Seafood Sausage - A unique way to use seafood.
Combinations of your seafood mixed with a delicious spice and stuffed into casings. Can be
grilled or added to your gumbo.
If you have your own "Secret Family Recipe", just bring me
your seasoning and I will make it for you and your secret will remain a secret.
Specialty Items:
- Cajun Poor Boy -
We take your backstrap, butterfly and roll it out until it's flat, line it with bacon,
season, stuff with a Creole meat stuffing, add a stick of smoke sausage, roll it back up,
wrap with bacon, jet net, and smoke it for 6 hours. This has
become such a popular item, we also make it from Domestic Pork!
- Tamales - We make these in Beef also
- *Snack Stix - Like a Slim Jim, but better. Only 7%
pork.
- *Breakfast Sausage - Venison, cooked scrambled eggs,
and bacon. Smoked and ready to eat cold, or heat it up and put it on a biscuit. (My own
invention)
- *Cotto Salami - Old World Style. Smoked with natural
hickory chips. Ready to eat.
- *Summer Sausage - Traditional summer sausage with a
New Orleans twist.
- *Duck Sausage - Mushrooms, green onion, parsley, and
Cajun spices.
- *Smoked Jalapeno & Cheese Sausage
- *Jerky
- *Bring me your backstraps and let me stuff them or make venison
